Handy Recipes

Here is a great recipe for any leftover courgettes or marrow you may have. Once made it looks like branston pickle and is great with cheese, with chilli or curry or jacket spuds.

Courgette ChutneyCourgette Chutney

4lb courgettes
6 onions (small)
2lb dark soft sugar
2 lemons (grated rind and juice)
2tbsp ground coriander
1tbsp cumin
1tsp cayenne pepper (optional)
2tspn salt
1 litre red wine vinegar

Chop it all up, place all ingredients in a large copper pan and gently simmer for 2 hours. This makes about 4 jars and so if you want to double it up that’s fine. When cooked place in sterilised jars and seal with lid. Keep in cupboard for up to a year and once opened keep in the fridge.

Pumpkin soup

Pumpkin soupIf you find you have a lot of pumpkin flesh left over after making the Halloween lanterns, then use it up and make some delicious pumpkin soup.

Take your pumpkin flesh; remove the seeds and chop up (rough).You can add some finely chopped carrot too.

Place the flesh in a saucepan with about one litre of vegetable or chicken stock (stock cubes are fine).

Add 1oz of butter and some salt and pepper. Bring to the boil and then simmer until the pumpkin is soft, then strain a little stock off from the saucepan and using a food blender blend the pumpkin and remaining stock. Place the blended pumpkin into a clean saucepan, add salt and pepper and pour in about 6-8fl oz of pouring cream. Single cream is fine or whipping but to have a real creamy taste, use double cream. Add the cream just before serving and a pinch of nutmeg on the top.
Serve with some hot bread and maybe a little French cheese!

Basic bread mix

Bread Mix2lb strong flour (bread flour)
2oz marg or butter
Pinch salt
1oz sugar
2oz yeast (fresh)
2 pints milk/warm water

Mix the flour, salt and marg into a bowl. Put the yeast, sugar and milk/warm water into a jug and mix. Leave the jug in a warm place for about 15/20 mins until the yeast starts to froth. Add liquid to the flour etc and then cover the dough with a tea towel and place in a warm area for 15mins to grow. After 15 mins take the dough and knead it for 5mins and then shape the dough, place on baking tray and cover again. Leave to prove (grow) for another 15mins and then place in an oven for 10/15 mins to cook. Electric oven 170 degrees.
